PAAUILO, HAWAII—ELLIOT Reddekopp shakes oils and powders into a saute pan. “Vanilla on vanilla on vanilla,” he informs his intent audience of soon-to-be diners. Then, with an expert flick of the wrist, he adds the final touch from a liter bottle of 12-year-old vanilla extract that immediately leaps into 2-foot flames.
